Executive Chef|Chinese Restaurant

An Executive Chef is needed to lead the kitchen at a Chinese restaurant set to open in Palo Alto, California.

<Job Overview>
The Executive Chef will be responsible for implementing and ensuring adherence to all culinary standards for the Omakase menu, as well as overseeing all culinary operations. The Executive Chef will supervise all kitchen functions, including leadership and mentoring, food purchasing, preparation, maintaining quality standards, and ensuring sanitation and cleanliness. This role will focus on high-quality Chinese Omakase and daily restaurant operations. The Executive Chef will have overall responsibility for all culinary activities, overseeing the daily operations of the restaurant, and managing the hiring, training, and supervision of the back-of-house staff.

 

<Job Description>
・Work closely with Corporate Executive Chef on new menu development & implementation for the menu
・ Supervise and coordinate daily production of all food and create staff schedules
・Serve as chef for special functions
・Assist in developing and updating recipes for menus and their costs
・ Oversee and assist in negotiating the purchase of food items and equipment used in food preparation with a focus on best pricing for the restaurant as a whole
・ Consistently inspect restaurant and observe quality of food prep and service, food appearance, cleanliness and sanitation of production, service areas, and equipment
・ Oversee product purchasing and manage culinary budget
・Ensure all invoices are accounted for, accurate, and turned into the accounting department on time
・ Assist kitchen staff with food prep and creation
・ Coordinate tasks for each back of house position and lead daily post and/or pre-shift lineups
・Work with the Catering Manager to ensure all catering orders are on time and accurate. Must plan for staffing and ordering needs for any catering orders being produced at their location
・ Display leadership by providing a positive work environment, counseling employees as appropriate, and demonstrating a dedicated and professional approach to management
・ Develop employees by giving ongoing feedback and establishing performance expectations by conducting performance reviews
・Review weekly schedules to meet forecast and budget
・Attend the required meetings and other administrative sessions
・Ensures disciplinary procedures and documentation are completed according to ORG policies
・Compliance with operational standards, company policies, federal, state, local laws, and ordinances

<Requirements>
・California Food Handler Certification (Manager Level)
・At least 5 years of Chinese cuisine or related experience in an upscale and high-volume setting
・Michelin experience preferred
・Omakase experience a plus
・Associates Degree in Culinary Arts or American Culinary Federation (ACF) certification is preferred.
・Strong knowledge of back of the house systems, ordering, and inventory
・Strong knowledge of local, state, and federal food sanitation regulations
・Strong knowledge of current and future food trends
・The ability to stand for long periods of time.
・Excellent time-management skills.
・Excellent communication skills
・The ability to work under pressure.
