<Job Summary>
This Director role oversees the sushi program across six locations in the CT/NY area, leading all aspects of quality, operations, revenue, and team performance. The position requires a leader who can elevate both the quality and volume of offerings, support new location openings, manage supplier negotiations, and oversee P&L with a strong business perspective.
<Job Responsibilities>
・Oversee, develop, and mentor sushi teams across six locations
・Elevate the overall sushi program in both quality and volume (menu innovation and standardization)
・Develop SOPs, improve operations, and conduct regular site visits
・Plan and execute new location openings (including pre-opening phases)
・Set revenue targets for the sushi division and manage performance and business development
・Negotiate with suppliers and ensure stable sourcing of premium ingredients
・Manage food cost, labor cost, and P&L
・Ensure compliance with food safety and sanitation standards across all locations
・Collaborate strategically with executive leadership (new product launches, expansion projects, etc.)
・Leverage network within the sushi chef community to recruit top talent
<Requirements>
・3.5+ years of sushi experience (required)
・4+ years of management and leadership experience (required)
・Experience managing multiple locations simultaneously (required)
・Experience opening new locations (required)
・Experience in high-end sushi or fine dining environments
・Proven experience managing P&L, food cost, and labor cost
・Strategic thinking and business development experience
・Strong network within the sushi chef community
・Experience in supplier negotiation and procurement management
・Experience developing SOPs and training programs
・Proven ability in team building and mentoring
