<Job Overview>
The Sushi Chef is responsible for assisting the Executive Sous Chef in managing all aspects of kitchen operations. This includes planning, organizing, directing, and ensuring customer satisfaction through the overall management of kitchen staff and processes. The Sushi Chef will lead by example with culinary skill, supervise all food-related tasks, and support consistent delivery of high-quality dishes across all kitchen areas.

Prepare various types of sushi, including maki rolls, nigiri, and sashimi

Adhere to rules as outlined in the employee handbook

Manage inventory (storage areas, freezer, refrigerator, spice rack, bag-in-box area, expo area, line, and service stations)

Input data for inventory, purchases/invoices, sales, and ending inventory (for COGS sheet)

Monitor food cost of goods sold (COGS)

Understand ingredient sourcing and pricing standards according to the order guide

Review previous week’s labor hours and identify areas for improvement

Perform daily and weekly food purchasing
-
Monitor daily and weekly labor (amount and percentage)

Handle new hires and terminations
-
Maintain minimum inventory levels for food and kitchenware

Communicate with Front of House regarding kitchenware needs

Assist with dishwashing

Report employee injuries

Attend weekly management meetings

Conduct pre-shift meetings with staff

Perform daily food inventory and ordering

Manage workforce and monitor overtime

Ensure FIFO (First-In, First-Out) product rotation

Oversee food quality and specifications

Ensure recipe adherence

Perform line checks

Organize the back of house (storage, prep, line, dish area)

Maintain sanitation standards (temperature logs, HACCP review, sanitation checks)
<Requirements>

Minimum 3 years of experience as a sushi chef

Strong knowledge and technical skills in sushi types and rolling techniques

Minimum 2 years of experience as a kitchen manager

Computer proficiency (Excel, Windows, POS, etc.)

Bachelor’s degree or culinary school diploma preferred but not required
