Sushi Chef | High-End Japanese Restaurant

A high-end Japanese restaurant located in Seattle, Washington is seeking a Sushi Chef.

The restaurant offers authentic Japanese cuisine, ranging from classic dishes such as udon and tempura to fresh sushi and sashimi. While maintaining traditional techniques, the cuisine is known for delivering flavors that leave a lasting impression.

 

<Job Responsibilities>

  • Oversee all sushi operations, including nigiri, rolls, sashimi, and other sushi preparations

  • Select seasonal fish and ingredients and plan seasonal sushi menus

  • Manage fish purchasing, food costs, and inventory

  • Control sushi rice preparation, seasoning, and consistency

  • Recruit, train, and schedule sushi department staff

  • Ensure compliance with sanitation and food safety standards

  • Conduct quality checks on fish, rice, and prep items prior to service

  • Collaborate with floor staff and management to optimize service speed and quality

 

<Qualifications>

  • Valid authorization to work in the United States

  • Bilingual in Japanese and English

  • Minimum 4–5 years of hands-on experience as a sushi chef (nigiri, sashimi, and rolls required)

  • Strong expertise in Japanese cuisine, particularly sushi (fish handling, preparation, and storage techniques)

  • Ability to identify seasonal fish and ingredients, with solid cost control skills

  • Proven leadership and staff training/management abilities

  • Knowledge of sanitation practices and food safety standards

 

Business Hours : (Dinner Service Only)
Wednesday – Saturday: 5:00 PM – 9:00 PM
Sunday: 4:30 PM – 8:30 PM
*Closed on Mondays and Tuesdays

給与Salary Hourly wage: $25–$30/hour (based on experience and skills) + tips
※Tip System (Estimated):
・Sushi chefs in the kitchen are eligible for tip sharing
・Eligible for 100% tip distribution after several months of employment
・At full eligibility: approximately $100 per day in tips
・Time required to reach 100% eligibility depends on individual performance
