<Job Description>
Establish and maintain effective working relationships with guests and co-workers
Prepare all types of sushi and Japanese food, including making sushi and sashimi
Select fresh ingredients and prepare high quality food
Manage food prep activities
Coordinate with wait staff to consider special requests (e.g. food allergies) and ensure proper preparation
Prepare appetizers, soups and salads similar to Japanese cuisine philosophy
Check food inventory and place orders as needed
Recommends new and modern recipes
Maintain sanitation principles in all kitchens and clean up your space at the end of your shift
Perform other duties and special projects as requested by supervisor
<Requirements>
5+ years of experience as a sushi chef in a fine dining restaurant
Omakase experience preferred
Cooking and knife skills
Understanding and knowledge of safety, sanitation and food handling procedures
Knowledge of health department rules and regulations and liquor laws and regulations
Knowledge of kitchen operations and production
