A Japanese restaurant located in California is seeking a Senior Sushi Chef.

**Assignment will be determined based on skills and experience.
<Job Description>
・Prepare sushi according to brand standards, including nigiri, sashimi, rolls, hand rolls, and special menu items
・Ensure the quality and freshness of seafood at all times and handle storage appropriately
・Maintain cleanliness of the sushi bar, workstations, and equipment
・Apply professional knife skills, including cutting and portion control
・Collaborate with sushi helpers on the development of new menu items, specials, and seasonal dishes
・Manage sushi ingredient inventory and support ordering as needed
・Ensure compliance with food safety and hygiene guidelines
・Train and mentor kitchen staff, including sushi helpers
・Maintain proper portion control and minimize waste
・Perform daily prep work, kitchen opening, and closing duties
・Consistently maintain quality, speed, and presentation for all sushi
・Actively contribute to teamwork and training within the kitchen
・Ensure guest satisfaction and uphold brand identity standards
<Requirements>
・Must have legal authorization to work in the U.S.
・5–10 years of experience in Japanese restaurants (not limited to sushi restaurants; must be able to handle sashimi)
・Able to stand for up to 8 hours
・Able to lift up to 40 pounds (approximately 18 kg)
・Able to thrive in a busy environment
・Personality-focused and able to work well in a team
・Collaborative mindset with respect for others
