They are seeking a passionate and skilled Head Sushi Chef (Sushi Department Manager).
The ideal candidate will demonstrate exceptional sushi craftsmanship and hospitality, leading the team in both the restaurant and the culinary school.
<Skills Required>
Candidates should be proficient in the following techniques and capable of teaching and demonstrating them:
Battera (pressed mackerel sushi),
Bou-zushi (rod-shaped sushi)
Oshizushi (pressed sushi)
Decorative sushi
Decorative rolls
Sasa-giri (bamboo leaf knife technique)
Anago (conger eel) preparation
Kohada (gizzard shad) preparation
Atsuyaki Tamago (thick Japanese omelet)
<Responsibilities>
・Oversee all aspects of the sushi department (prep, cooking, plating, and quality control)
・ Select, procure, and manage inventory of ingredients
・Train, mentor, and evaluate chefs, apprentices, and kitchen staff
・Ensure hygiene and safety standards are maintained
・Assist in planning and executing events and special classes at the restaurant and culinary school
・Collaborate with the Executive Chef and ownership team
・ Maintain brand quality and consistency while contributing to business growth
<Requirements>
・Extensive experience as a sushi chef, preferably in high-end or international environments
・Experience in staff training and team management
・Deep knowledge and practical expertise in Japanese cuisine
・Japanese and English proficiency
・Strong hospitality mindset with the ability to adapt to an international clientele
