A high-end Japanese restaurant in Washington, D.C. is seeking an experienced Sushi Chef.

 

<Job Overview>
The Sushi Chef is responsible for the precise execution of sushi and omakase offerings in accordance with established
recipes, techniques, and presentation standards set forth by the Executive Sushi Ch

 

<Responsabilities>
・Executes all sushi, sashimi, nigiri, and omakase components as designed by the Executive Sushi Chef
・Costs all recipes regularly to ensure profitability targets are achieved
・Maintains consistency in product quality, portioning, knife work, temperature control, and presentation
・Ensures all items are prepared accurately and in a timely manner for service
・ Maintains cleanliness, organization, and station readiness at all times
・ Completes mise en place and station setup / breakdown according to standards
・ Cultivates positive, professional relations with vendors, including interactions on property with culinary staff
・Adheres to all kitchen SOPs and service protocols
・Ensures compliance with D.C. Department of Health regulations and internal sanitation standards
・ Follows line check procedures to ensure food safety
・Ensures no member of staff is permitted to work if not suitably dressed or groomed
・Practices and promotes safe work habits
・ Properly receives, stores, labels, and rotates all sushi-related products
・ Monitors product usage to minimize waste
・Handles high-value fish and ingredients with accountability
・ Communicates quality concerns immediately
・ Supports inventory counts as directed
・ Works collaboratively with BOH and FOH teams
・Participates in pre-shifts and trainings
・ Maintains professionalism under pressure
・ Upholds grooming and uniform standards
・ Demonstrates positive leadership characteristics that inspire team members to meet and exceed standards
・ Communicates information effectively and efficiently
・ Attends and/or organizes mandatory meetings, including staff and leadership meetings
・ Participates in community events and supports the corporate social responsibility goals of The Group
・ Ensures all staff comply with Company policies and procedures, as well as city, state, and federal laws
・ Adheres to all HR policies and procedures

 

<Requirements>
・Able to lift 30+ pounds
・ Fluent in both written and spoken English
・5+ years of experience as a Sushi Chef in a concept of similar caliber
・ High school diploma or GED
・ Bachelor’s Degree in Culinary Arts or a similar subject
・ D.C. Food Protection Manager Certificate — candidates should ideally hold one already. The company provides
guidance on how to obtain it, and any new hire without one is expected to obtain it as soon as possible after joining
・Must be authorized to work in the United States
・ Considerable skill in math and algebraic equations using percentages
・ Polished personal presentation; grooming meets The Group standards as outlined in the Employee Handbook
・ Able to work nights, weekends, and holidays, and a variable schedule per the needs of the business
・ Able to walk, stand, and/or bend continuously and for extended periods as required to perform essential job functions
・ Able to perform essential job functions under pressure and maintain professionalism when working under stress
・ Maintains general knowledge of the location, transportation, management team, and related information
・ Able to use traditional software such as Gmail and Microsoft Office (Word, Excel, Outlook, PowerPoint), and to access
and accurately input information using a moderately complex computer system
・ Maintains knowledge by attending educational workshops, reviewing professional publications, establishing personal
networks, benchmarking state-of-the-art practices, and participating in professional societies
