A Japanese restaurant located in Palo Alto, California is seeking an experienced Sushi Chef.

<Job Responsibilities>

  • Oversee all sushi bar operations, including nigiri, maki, sashimi, and other sushi preparation

  • Select seasonal fish and ingredients and develop seasonal sushi menus

  • Manage fish and ingredient purchasing, cost control, and inventory

  • Supervise rice preparation and vinegar mixing to ensure consistency in flavor and quality

  • Recruit, train, and schedule sushi staff

  • Maintain strict hygiene standards and ensure all food safety procedures are followed

  • Conduct quality checks on fish, rice, and all prep items before service

  • Collaborate with floor staff and managers to improve service speed and overall quality

 

 

<Requirements>

  • Must have valid authorization to work in the U.S.

  • Professional experience as a Sushi Chef (nigiri, sashimi, and maki skills required)

  • Strong knowledge of Japanese cuisine, especially sushi preparation, fish handling, and storage techniques

  • Ability to evaluate ingredient quality and manage food costs

  • Strong leadership and staff management skills

  • Knowledge of hygiene regulations and food safety standards
