<Job Responsibilities>

Oversee all sushi bar operations, including nigiri, maki, sashimi, and other sushi preparation

Select seasonal fish and ingredients and develop seasonal sushi menus

Manage fish and ingredient purchasing, cost control, and inventory

Supervise rice preparation and vinegar mixing to ensure consistency in flavor and quality

Recruit, train, and schedule sushi staff

Maintain strict hygiene standards and ensure all food safety procedures are followed

Conduct quality checks on fish, rice, and all prep items before service

Collaborate with floor staff and managers to improve service speed and overall quality
<Requirements>

Must have valid authorization to work in the U.S.

Professional experience as a Sushi Chef (nigiri, sashimi, and maki skills required)

Strong knowledge of Japanese cuisine, especially sushi preparation, fish handling, and storage techniques

Ability to evaluate ingredient quality and manage food costs

Strong leadership and staff management skills

Knowledge of hygiene regulations and food safety standards
