<Job Overview>
Work collaboratively with team members and delivery staff to produce dough for all three stores as well as wholesale products. Responsibilities include fermentation, shaping, and baking to produce safe and consistent-quality bread. Efforts to improve quality are essential. Duties also include making non-bread items such as meat buns, sweet buns, baked goods, developing new products, and maintaining cleanliness and hygiene of the workspace, machines, and tools. From a management perspective, responsibilities include managing ingredient inventory, receiving and inspecting deliveries, and moving goods.
<Responsibilities>
1. Bread & Pastry Production

Production Planning & Ingredient Measurement: Calculate the next day’s production volume, considering store reservations and wholesale orders, and measure ingredients for preparation.

Dough Preparation & Fermentation: Mix and knead ingredients to make dough, then ferment at appropriate temperature and humidity to ensure quality.

Shaping: Shape the fermented dough into various types of bread within the allotted time.

Baking: Bake bread efficiently in ovens at precise temperatures and times.

Production of Other Items: Prepare meat buns, sweet buns, and baked goods.

Quality & Safety: Produce safe products with consistent quality and work to improve product standards.

Recipe Development & Product Management: Develop new bread recipes and adjust existing recipes according to seasonal ingredient quality.
2. Other Duties

Hygiene Management: Maintain personal hygiene and keep the workspace, tools, and equipment clean, complying with food safety standards.

Inventory Management: Monitor ingredient inventory, receive and inspect deliveries, and manage stock.

Team Coordination: Work with team members and delivery staff to ensure smooth product handling.

Operational Support: Collaborate with the Store Manager to improve production processes, equipment, and train team members to enhance store operations.

3+ years of experience as a Baker

Bilingual in Japanese and English (Spanish a plus)
