Professional-level proficiency in Japanese (reading, writing, and speaking)

Willingness to follow dietary restrictions that may affect sake production:
*Natto (from one month prior to starting)
*Strongly fermented foods such as kimchi, yogurt, and kombucha (from one week prior to production)
