Japanese Cuisine Chef (Kaiseki / Sushi) | Michelin-Starred Restaurant Group

A Michelin-starred Japanese restaurant group based in Manhattan, New York City is seeking Japanese cuisine chefs.

This position is not limited to a specific restaurant; recruitment is conducted at the group level. The group currently operates multiple restaurants in New York and plans to expand into Europe. Candidates interested in working at the NY or European locations are welcome.

Applicants with experience in Japanese cuisine or sushi are encouraged to apply, even if they do not have Kaiseki experience.

This position is primarily for candidates with U.S. citizenship or a Green Card. However, visa sponsorship may be considered for highly skilled or motivated candidates.

Job Description

  • Prepare Kaiseki or sushi dishes

  • Perform ingredient prep, inventory management, and maintain hygiene standards

  • Support course menu development and preparation

  • Execute kitchen operations as part of a team

Placement in a brand or position will be determined through the interview process based on experience and suitability.
For sushi positions, candidates should be able to handle nigiri at a second-in-command level or higher.

Requirements

Mandatory:

  • Practical experience in Japanese cuisine (not limited to Kaiseki; general Japanese cuisine experience is acceptable)

  • English: Conversational to business level

Preferred:

  • Experience in Kaiseki cuisine

  • Experience serving as a sushi chef at the counter

  • Overseas work experience

  • Willingness to work in Europe in the future

Japanese language skills are not required.
