A Japanese Restaurant located in Coral Gables, Florida is seeking a Head Sushi Chef.

Oversee the full operation of the sushi station

Manage procurement, quality control, and inventory of fresh seafood

Train, supervise, and schedule kitchen staff

Develop seasonal and creative sushi menus

Maintain strict hygiene and food safety standards

Handle customer requests and provide excellent service

Collaborate with front-of-house staff and management to ensure smooth operations
Business Hours:
Dinner only, 1st course starts at 6PM and 2nd course starts at 9PM
*Restaurant will close around 11:00-11:30PM
<Requirements>

Bilingual in Japanese and English

10-20 years of experience as a sushi chef

Experience working at a Michelin-starred restaurant and/or an omakase-style restaurant

Strong understanding of Japanese culinary culture

Knowledge of kaiseki, sushi, and high-end Japanese cuisine

Skilled in knife handling, plating, and fish preparation
-
Available to work on weekends

Able to work collaboratively and value teamwork
