Kitchen Manager|Japanese Restaurant

A Japanese restaurant in Alhambra, Los Angeles is looking for a Kitchen Manager for a major Japanese restaurant that operates several Japanese restaurants (Yakitori, Ramen, etc.) in California.

<Job Summary>

The Kitchen Manager is responsible for a variety of duties including overall supervision of daily kitchen operations, food preparation in compliance with legal and health standards, cooking and safe sanitary activities. The Kitchen Manager is responsible for assisting the kitchen staff to work efficiently and effectively.

<Job Description>

Train, manage, and supervise kitchen staff.
Manage the staffing of the entire shift.
Supervise and coordinate the restaurant’s culinary activities.
Estimate food consumption.
Places orders for food and supplies as directed.
Receives merchandise and verifies invoices and product freshness.
Ensures that kitchen staff follows all recipes and prepares food correctly to assure quality.
Establish food presentation techniques.
Establish food quality standards.
Ensure that all kitchen equipment is properly functioning and maintained.
Ensure that the entire kitchen is safe and sanitary.
Keep the kitchen, utensils, and storage areas clean and organized.
Maintain a neat and clean appearance and work in a clean and professional manner.
Comply with the rules and regulations of the Department of Public Health and all other applicable laws and regulations.
Participate and contribute to team meetings.
Perform duties as directed by the General Manager.



At least 3 years’ experience as a kitchen manager or sous chef in a restaurant setting.
Must have a Manager Food Handler Card.
Business level English, conversational level Spanish
Good knowledge of Japanese cuisine
Knowledgeable about kitchen satellites, kitchen equipment and kitchen operations
Knowledge of menu development, cost analysis, product sourcing, and recipe development preferred
